Sweet & Sour Shrimp With Oranges

Sweet & Sour Shrimp With Oranges
Makes 4 servings.

Ingredients

1 medium onion, coarsely chopped
1 medium green bell pepper, coarsely chopped
3/4 cup ketchup (no salt added)
1/2 Sunkist lemon, peeled and juiced
1 tbsp. cornstarch
3 tbsps. brown sugar
1/2 cup fresh squeeze orange juice
1/4 tsp. ground ginger or 2 tsps. fresh grated ginger root
3 Sunkist oranges, peeled, cut into bite-size pieces
20 small to medium cook shrimp, with tails and shells removed (about 7 ozs.)
3 cups cooked rice (no salt added)
Chopped cilantro or parsley

In large non-stick skillet, spray with no-stick cooking spray, cook onion and green pepper over medium-high heat until tender but not browned. Add ketchup, lemon peels, and lemon juice. Blend cornstarch and sugar with orange juice and ginger; add to sauce. Cook, stirring until thickened. Add orange pieces and shrimp; heat. Serve over hot-cooked rice. Sprinkle with chopped cilantro. Serve with lemon wedges, if desired.

Fresh Northwest Cherry Salsa

Fresh Northwest Cherry Salsa
Makes 4 servings, each serving equals one 5 A Day serving.

Ingredients

2 cups pitted fresh or frozen sweet cherries
1/3 cup Basil, fresh, chopped
1/3 cup Green peppers, finely chopped
2 tsp Lemon juice
½ tsp Each of: Worcestershire sauce and grated lemon peel
¼ tsp Salt
Dash of bottled hot pepper sauce

Chop cherries in food processor or manually. Combine all ingredients; mix well. Refrigerate at least 1 hour.

Anthocyanins, the ubiquitous compound found in colored fruit and vegetables, are present in kids favorite foods – carrots. According to an article published in the Rocky Mountain News,

Researchers found that changing a carrot’s color also enhances its nutritional value.

The yellow hue comes from xanthophylls, which have been linked to good eye health, while red ones are colored by lycopene, a type of carotene also found in tomatoes

New Research Indicates New Cranberry is Packed with Amazing Health Benefits

Juice drinks, saucy relishes and dried fruit products may one day boast a new cranberry variety with a readily absorbable dose of healthful antioxidants. Agricultural Research Service scientists and colleagues are using traditional breeding methods to suit up a wholesome new cranberry line with just such a genetic trait.

Since brightening up the first Thanksgiving celebration nearly 400 years ago, the typical American cranberry variety has only recently been bred to develop hybrids. The team found an attractive cranberry species from Alaska that is genetically similar enough to the American cranberry to produce fertile progeny.

The Alaskan species is also attractive because some of the fruit’s many healthful chemical compounds—called anthocyanins—are glucose-linked. In nature, most anthocyanins are bound to sugars.
