Choosing the right cherry.

We have had a lot of our customers ask us how cherries are grouped. Cherries are grouped according to taste of the fruit. Bascially into sweet and sour types. Within each of these groups, cherries are classified on the basis of the color and firmness of their flesh. The darker the cherry, the sweeter its flavor. The brighter the color the more tart the fruit is. Here is a photo of the Montmorency tart cherry. You can see the brightness of the this variety.
