Black Bean Salsa Stuffed Peppers

Black Bean Salsa Stuffed Bell Peppers

Ingredients

  • 1/4 cup chopped cilantro
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (optional)

Steps

  1. Preheat oven to 375°F.

  2. Cut the tops off the bell peppers and remove seeds.

  3. In a bowl, mix Traverse Bay Farms black bean salsa, quinoa, corn, tomatoes, cilantro, cumin, chili powder, salt, and pepper.

  4. Stuff the bell peppers with the mixture and top with cheese if desired.

  5. Place in a baking dish and bake for 25-30 minutes until peppers are tender.

  6. Serve hot and enjoy!
