In the Traverse Bay Farms kitchen, we’re always looking for ways to give classic desserts a Michigan-inspired makeover. One day, while sipping our tart cherry juice concentrate, we realized its deep flavor could elevate something elegant like tiramisu.

The result? A vibrant, cherry-layered masterpiece that’s light, creamy, and unforgettable. We first served it at our Elk Rapids store tasting event — and it vanished before we could plate seconds.

Tart Cherry Recipe - Cherry Tiramisu

Prep & Yield

  • Prep Time: 25 minutes

  • Chill Time: 4–6 hours (overnight preferred)

  • Yield: 8 servings


Ingredients

Cherry Soak

  • ½ cup hot water

  • 2 tbsp Traverse Bay Farms Tart Cherry Juice Concentrate

  • 1 tbsp honey or sweetener of choice

Mascarpone Cream

  • 1 cup heavy cream

  • 1 cup mascarpone cheese

  • ¼ cup powdered sugar

  • 1 tsp vanilla extract

Assembly

  • 20–24 ladyfingers (savoiardi)

  • 1 cup pitted cherries (fresh or frozen, thawed)

  • Cocoa powder or shaved dark chocolate (for garnish)


Instructions

  1. Prepare the Cherry Soak: In a small bowl, mix hot water, Traverse Bay Farms Tart Cherry Juice Concentrate, and honey. Stir until combined.

  2. Make the Mascarpone Cream: Beat heavy cream, mascarpone, powdered sugar, and vanilla until smooth and fluffy.

  3. Assemble the Layers: Quickly dip each ladyfinger into the cherry soak and layer them in a glass dish.

  4. Spread half of the mascarpone cream over the layer, followed by half the cherries.

  5. Repeat the layering once more: soaked ladyfingers, cream, and cherries.

  6. Chill: Cover and refrigerate for 4–6 hours (overnight for best flavor).

  7. Garnish & Serve: Dust with cocoa powder or top with shaved chocolate before serving.
