They also move through an extraordinarily compressed growing season. Michigan educational materials note that roughly 60 days may separate cherry blossom from harvest.
Bloom and pollination happen in a narrow window
Tart cherry trees are self-fertile, but bees and other insects still play an important role in achieving strong pollination and fruit set. That makes bloom weather important.

A mechanical cherry harvester moves into position beside the tree and clamps onto the trunk. A catching surface extends beneath the canopy. The machine then sends rapid vibration through the tree, releasing ripe cherries in a sudden shower.
The entire event takes seconds.
University of Michigan reporting from a Northern Michigan farm describes thousands of cherries falling onto a catching frame, moving across canvas and conveyor belts, and entering a bin of cold water. In that operation, the machine was ready to move to the next tree about two minutes later.
That speed matters economically.
Hand harvesting millions of pounds of processing cherries would add enormous labor, time and handling costs. Mechanical harvesting allows a grower to move through an orchard during the short period when fruit reaches the proper maturity.
The cherry lands in water, not a picking basket
One of the most visually surprising parts of tart cherry harvesting is what happens immediately after the cherries leave the branches.
They fall onto an angled catching surface, travel toward a conveyor and enter a tank containing cold water.
The water performs two important jobs. It cushions the soft fruit during handling and immediately begins removing field heat.
Michigan educational materials describe harvest tanks holding approximately 1,000 pounds of cherries along with about 1,000 pounds of water. The water is continually exchanged as the cherries cool.
So the clock does not begin when the cherries arrive at a processing plant.

What Happens After Tart Cherries Leave the Orchard?
The orchard is only the first half of the Michigan tart cherry journey. After harvest, the emphasis shifts from growing fruit to preserving quality: cooling, washing, sorting, stemming, pitting and moving the cherries into the form in which consumers will eventually encounter them.
Cold water removes field heat
Freshly harvested cherries arrive at cooling areas already immersed in water. Cold water continues circulating through the tanks to pull heat from the fruit before processing.
This matters because tart cherries are unusually delicate. Temperature, time and physical handling all influence fruit quality.
Traditional Michigan harvest operations may continue cooling fruit in water for several hours before it is transported to a processor. This is why it is more accurate to think of hydro-cooling as a process that starts almost immediately rather than a single event that happens later.
The pits have to come out at industrial speed
At the processing plant, cherries are cleaned and prepared for pitting. Specialized cherry pitters remove the stone at commercial scale.
This sounds simple until you consider the combination of speed and precision required. The pit has to be removed while retaining as much usable fruit as possible. Michigan-based Dunkley International, which has manufactured cherry-processing equipment for more than a century, describes pitting as both an art and a science.
Optical sorting adds another layer of technology
Modern fruit processing increasingly uses optical and camera-based sorting systems to inspect cherries for characteristics such as size, color and defects.
Some advanced commercial cherry graders can capture as many as 30 images of an individual cherry as it passes through the machine. Not every Michigan tart cherry processor uses the same equipment or configuration, so that number should not be treated as a universal industry specification. It does, however, show how sophisticated modern fruit sorting has become.
From orchard machinery to computer vision, the tart cherry business is much more technologically intensive than most shoppers ever see.
Where do all those tart cherries actually go?
Very few become fresh-market fruit.
The USDA says almost 99% of the crop is processed. Major destinations include frozen tart cherries, dried tart cherries, canned products and pie filling, tart cherry juice and cold-pressed tart cherry juice concentrate.
Freezing is particularly important because it extends the usefulness of an intensely seasonal crop. At Stony Point, the temperature fell to 18°F
Growers entered spring 2026 with reason for optimism. The winter had been cold, and spring development initially progressed gradually.
Then came April.
At Stony Point south of Suttons Bay, temperatures fell to approximately 18 degrees Fahrenheit. Nikki Rothwell of Michigan State University's Northwest Michigan Horticulture Research Center explained that even though many blossoms had not yet opened, the buds had developed far enough to suffer significant cold damage.
Regional tart cherry losses in Northwest Michigan were subsequently estimated at roughly 70% to 80%, although conditions varied significantly from orchard to orchard.
The supply problem extended beyond one orchard region
USDA's July 2026 outlook forecast Michigan production at 83.1 million pounds—26.9 million pounds below the previous season and the state's smallest crop in six years.
Utah suffered severe freeze damage as well.

There were fewer cherries waiting in storage, too
A short crop is easier for processors to absorb when significant inventories remain from the previous season.
That was not the situation heading into 2026-27.
At the end of May 2026, USDA reported lower frozen tart cherry inventories across ripe tart pitted cherries, juice stock and juice concentrate. Ripe tart pitted cherries in cold storage were down 37% from the prior year and at their lowest May level since 2013.
That is why a spring freeze can ultimately be felt far from the farm. The harvest supplies processors, processors supply manufacturers and brands, and stored fruit helps bridge one short Michigan growing season to the next.
